Waste Not Want Not

On market day or the day before, depending on the weather, I harvest the greens. David washes them and then I grade and package them. Anything that does not make the grade is put into a bag. Later in the week I sort through these leaves. Damaged stems, soft or broken, go into a pot for making vegetable broth and misshapen or holey leaves are saved for salads. Produce that is excessively decomposed is composted.
